Chocolate Crinkle Cookies

Do you know Chocolate Crinkle Cookies ? I needed some inspiration, some motivation and some energy to move away from the couch and get charged up. Yes, it was one of those super lazy, laid back kind of days where I didn’t have to make any lunch as there were leftovers from last night and pizza take-out was in my mind for dinner.
By the time it was late afternoon, I started to get bored and hungry. I opened the refrigerator and realized that it’s almost empty, which made me even hungrier. Scanned the pantry and thankfully, there was a tiny packet of chips hiding at the back of the counter. Nice and cozy. After making a quick shopping list, I sat down with the chips and started browsing Pinterest.
Then, the next few hours unexpectedly got very busy. I was excited and I wanted to bake. This picture Chocolate Crinkle Cookies did all the magic!
And I had all the required ingredients.

What I liked the most about this recipe is that it had no chocolate and no butter — just oil and cocoa powder. That’s good; cause chances are I might have to eat the whole lot! In case you didn’t know, Arvind likes only white chocolate and I love dark chocolate. Opposite sure does attract, huh!
Once the dough got ready, I realized that these cookies would not make the husband very happy. So, I baked a pizza too for dinner.
Who knew Pinterest could surprisingly change my least productive day to such an energetic one! Well, no pizza for you today but I have got cute, crinkly cookies.

These cookies are super easy peasy to put together. The dough needs to be refrigerated for couple of hours before you make tiny balls and roll them in confectioner’s sugar. While baking, it rises and spreads a little allowing the chocolaty dough to peek out, creating gorgeous cracks on top. If you don’t have a huge sweet tooth and still love cookies, this just might become your favorite.

Chocolate Crinkle Cookies
Ingredients
  • 4 eggs
  • 1/2 cup olive oil
  • zest of 1 lemon
  • 1 cup unsweetened cocoa powder
  • 2 cups sugar
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 tsp vanilla extract
  • pinch of salt
  • 1/2 cup confectioner's sugar
Directions
  • Mix flour, cocoa powder, baking powder, salt and sugar in a bowl.
  • Add one egg at a time and start mixing the dough.
  • Then, add vanilla extract, olive oil and lemon zest. Give it one final mix and the dough is ready.
  • Cover the dough and keep it the refrigerator for a couple of hours.
  • Pre-heat the oven to 350F.
  • Keep the cookie sheet ready with parchment paper.
  • Pour the confectioner’s sugar in a bowl.
  • Take the dough out of the refrigerator.
  • Using an ice-cream scooper or a spoon, roll the dough into 1-inch balls and drop in the confectioner’s sugar.
  • Roll it in the sugar and keep it on the parchment paper.
  • Bake it for 10 to 12 minutes or until a toothpick comes out clean when inserted in the center of the cookie.
